Tokneneng is the popular name of this food, commonly sold in the streets all over Philippines. This street food is really, really good together with fish balls, kikiam, chicken balls, squid balls and the like.
Ingredients:
30 pcs. quail eggs – boiled and peeled
1 cup all purpose flour
2 large eggs – beaten
1/4 cup water
1 stalk celery – minced
1 tsp. salt
1/2 tsp. black pepper powder
a pinch of magic sarap
1 1/2 cup canola/vegetable oil for frying
Optional: 1 tbsp. atsuete powder to add color to the batter mixture
For the sauce:
1/4 cup banana catsup
1/4 cup water
1 tsp. corn starch
1 medium sized onion – crushed and minced
2 cloves garlic – minced
2 tbsp. soy sauce
1 tsp. brown sugar
Instructions:
1) For the batter, mix thoroughly the flour, eggs, salt, pepper, magic sarap, celery, and water.
2) Add the quail eggs to the batter mixture and mix.
3) One by one, scoop each egg, making sure that it is covered with batter mixture, using 2 spoons and deep fry for 2-3 minutes or until golden brown.
4) Ready to serve with the sauce.
For the Sauce:
1) Saute garlic until golden brown, followed by the onion. While sauteing, dissolve the corn starch to the water.
2) Add the catsup, water, soy sauce and brown sugar. Let it boil, stir and simmer for 1-2 minutes.
